Friends, you have got to give this pretty, quick, delicious and mostly healthy appetizer a try! It’s perfectly festive to serve or share at your upcoming holiday gathering. I have modified my version from a great blog I found called Williams Kitchen. The original recipe, designed to make 8 servings, can be found by clicking here. I was in need of an easy but tasty appetizer that I could mass produce and serve in large quantity for a holiday party. Here is my modification for around 80 tablespoonfuls of drizzle and 140 skewers:
1/2 Cup Dry Basil
12 Whole Jarred Garlic Cloves
4 1/2 Cup Parmesan Cheese
1 1/2 Cup Pine Nuts
3 Cup Olive Oil
Place all ingredients into commercial blender. Start on a low blending speed and gradually increase until all ingredients are evenly mixed.
Tortellini & Tomato Skewers
2 Packages of 2 Pound Cherry Tomatoes
3 Packages of 20 Ounce Cheese Tortellini
2 Packages of 100 Bamboo Skewers
Prepare tortellini according to package instructions. After draining pasta, lightly toss in olive oil. Wash, rinse, and half each tomato. Alternate one tortellini and one tomato half on each skewer, starting with a tomato. Spread items evenly over stick, leaving enough handle to grasp at the bottom. There are enough for three tomato halves and two tortellini shells on each skewer in this recipe.
Chill for two hours, or overnight if desired. Stack skewers on festive platter and serve with filled dipping sauce dish and spoon.
I was surprised at how simple and tasty this dish was. It was easy to create in mass quantity and could be served as part of a meal or as an appetizer.
